4.5 Days in Vienna - HELP!!

Hi All,
I hope you can help me to plan the dates better.
Here is what I scheduled for now.
9/1 - 8:45 pm – Dinner reservation - Plachutta Wollzeile
Wollzeile 38, 1010 Wien
We bought tickets to the opera. Does it make sense to go on a separate excursion to the Opera House?
There is supposed to be an open house on September 1 @ 6 pm. The tickets shall be available only at the end of August. Should I break my neck to get them?
9/2 – Vienna City tour am, Albertina and Heidi Horten (?)
I am not sure we can do 2 museums in one day. I am afraid it will be too much to absorb...

9/3 – Upper Belvedere am; Karlsplatz and Vienna museum pm (maybe only Belvedere ??)
13:30 – Café Central (coffee stop)
19:00 – Apron - Dinner reservation - ??? Not sure we want to keep this either..

9/4 - Schonbrunn Palace in the morning; Jewish sites pm; or Leopold museum???
17:00 – Loca Causal dining
19:30 - Musikverein performance

9/5 - Kunsthistoriches am; Leopold pm; (??)
16:45 - Gastwirtschaft Huth - Dinner reservation
19:00 - Wiener Staatsope – Carmen

NONE of the dinner reservations cut to stone. I am not sure I want to go Apron. I'd rather go to some simple local place with good food. We are not big on Michelin restaurants...
Can you please let me know what you think? Can you recommend some dinner and coffee places? We are coffee maniacs :}

We very much enjoyed schnitzel at Lugeck which is right near the Gutenberg memorial and also enjoyed brunch/lunch at Steirereck which is in the Stadtpark on the storm drain/canal. We ate at both places twice in 2018 and 2022.

Try to get tickets for the open-house day at the Staatsoper. There are two dates: 2:30pm and 6pm. You need to check their ticket selling website regularly early in the morning; ticket sales (for free) start at 10am local time.

Change your dinner reservation from Plachutta Wollzeile to Plachutta Hietzing, if possible. Plachutta Wollzeile is overrun by tourists.

The same holds for Café Central. Except for the interior there is not much left of the ambience of a historic Viennese coffee house.

Your selection of restaurants (except Plachutta) focuses on (expensive) international cuisine. There is excellent Viennese cuisine available at a large number of places for a fraction of costs.

I'd appreciate it if you could share the name(s) of the local restaurants if you have them. This is exactly what we are looking for.
I understand that Cafe Central is very touristic. That's why we are stopping by there only for coffee. Just to see inside.

This is Vienna's most comprehensive restaurant guide, listing 4000+ places. Although in German it is easily understandable. You can select features like "Empfohlen" (recommended), then you get only the "better" places (there are no bad places), or "Alle Bezirke" (city boroughs), or "Alle Lokaltypen" (type of establishment), or "Alle Küchen" (type of cuisine).

We had a great meal at Figlmullers. They have two locations. Sould be able to check out menus on line and see if it calls to you.
