How easy is it to find vegetarian and vegan food in Portugal? Any recommendations in Porto and Lisbon?

Extremely easy.
Google maps are always helpful.
Plenty of Indian restaurants in both cities. In Lisbon, simple Desi Masala in Baixa was surprisingly delightful.
In Chiado, Jardim Das Cerejas has a vegetarian buffet with many interesting items. These are just two of the many vegan/vegetarian places in Lisbon.
In Porto, of course daTerra in center of the town. Shahi Dawat is bit out of the way and may need Bolt but worth the trip
Avoid, over hyped casa vegetariano which is inside Bolhalo market
But in both cities, you will have plenty options of both kinds (bland and spicy)

Perfectly easy. You'll have no problems finding vegetarian/vegan food however your choices might be more limited depending on your choice of restaurant.
